Known as “The Fermentation Doctor,” Dr. Heist brings a unique combination of rock ‘n’ roll roots and hardcore science to the bourbon world. With a PhD in microbiology from the University of Kentucky, he’s worked with over 600 distilleries worldwide through Ferm Solutions before co-founding Wilderness Trail in 2013 with his former bandmate Shane Baker. Before they became known as “the science guys of whiskey,” they were bandmates in the rock group Zella May – and Dr. Heist still rocks out with the band today.

Dr. Heist’s scientific approach has revolutionized modern bourbon making – from pioneering sweet mash techniques to developing proprietary yeast strains and lower-temperature cooking processes. Wilderness Trail’s rapid rise caught the attention of Campari Group, which acquired a 70% stake for $420 million in 2022, making it the 14th-largest bourbon producer in the world.
